Hello,
maybe a stupid question, but is it possible to add two or more Fingboxes from different networks to one account and also manage all of them from the FingApp on one iPhone?

Yes, it is possible. You can add multiple Fingbox to same Fing account given all network must be different ie not sharing the same network gateway.

    Thanks a lot @Robin!

How long should it take for the app to add a Fingbox when the ligh tof the box is flashing green (1 long flash, 2 short flashes), and does it matter if the iPhone is connected to the 2.4Ghz WIFI of the router or to the 5Ghz WIFI (my router operates both simultaneously)?
If both 2.4Ghz and 5Ghz have different SSID names then you need to connect the Fingbox with same access point as your device. I have replied to you via your support ticket. Please check. Thanks
